It’s basic human nature that when we do wrong we try to cover it up; we try to hide it. I remember one time when my first child was quite young, she asked to have a cookie. I told her no because it was almost dinner time, but then I went upstairs to do some things. When I came back down I couldn’t find her. Finally, I walked around the couch and there she was, hiding behind the couch, cookie crumbs covering her hands and mouth. She was trying to hide. It’s human nature.
Adam and Eve were trying to cover up their sin and they hid from God. They knew that what they had done was deserving of death because God had already told them so. From Genesis 3:9-20 we see Adam blaming Eve for the sin and Eve blaming the serpent. That’s the other thing we try to do when we sin, we blame-shift. “It’s not my fault, the devil made me do it!”
But notice what God did:
Genesis 3:21 NIV  The LORD God made garments of skin for Adam and his wife and clothed them.
